Winter fare: hot and hearty lentil stew

I’ve recently been struggling with the cook’s version of writers-block; basically banging my head against the wall trying to come up with anything nutritious to make. Finally, we experienced our first cold snap, and my brain latched on to soup! Still suffering from a lack of creativity, though, I searched for veggie soup recipes and came across this recipe, from It’s full of lentils, sweet potato, kale and tomatoes, and flavored with fresh thyme. Mmm mmm mmm!

In less than an hour, I had an enormous pot of super savory stew.




Delicious with a sprinkling of parm and some crusty french bread.
