Simple vegan truffles

Each time I taste the results of a new vegan no-bake adventure, I wonder how it’s possible that a dessert can taste so good with absolutely no added sugar or dairy. Plus there’s the added benefit of not having to turn on the oven. Oh the places you’ll go with a food processor!

This is another recipe from Green Kitchen Stories.

Ingredients

15 Mejool dates, pitted

100 g almonds

100 g shredded dried coconut (the unsweetened kind)

2 Tbsp coconut oil (mine was liquid form–duh, it’s summer–and that was fine)

4 Tbsp unsweetened cocoa powder

1 Tbsp water

1 tsp cinnamon

+some ground coffee and/or some extra cocoa powder for rolling

Method

This is one of those 1-steppers: put it all in the food processor and process for ~1 minute until things are nice and mixed and sticky.

Then, refrigerate the mixture for 10 minutes, before rolling.

 

Roll into balls (I did mine on the smaller side) and then roll in toppings of choice, if you like. Keep refrigerated, and if you’re wanting to nosh right away, use self control for 20 minutes because these babies need to go back in the fridge. I am loving the coffee and chocolate rolled truffles!
