Eggplant/ Tomato Delight

IMG_0369This little experiment, while not at all original, is exceptionally easy and delicious. I can’t remember the last time I made a great meal having only sliced one vegetable.


1 eggplant

1 jar good tomato sauce


parmesan cheese


Slice the eggplant as thinly as you can

Toss the slices lightly in olive oil

Coat the bottom of a casserole dish with one layer of eggplant slices

Pour tomato sauce over the eggplant liberally, and sprinkle some thyme on top

Build another layer of eggplant, repeating the process with tomato and thyme, until you are out of eggplant

Sprinkle the top layer with grated cheese, cover and bake at around 400 degrees until eggplant is tender
