I could eat this white bean spread on just about anything– spread it on top of toast for a crostini, spoon it on a salad, or just eat it with a spoon…
It’s easy and fast, too.
1 can white beans, rinsed, or fresh, cooked white beans
1/4 cup vegetable broth
2 tbsp olive oil
1-2 large garlic clove, finely chopped
salt and pepper
heat the olive oil in a pan and add the garlic, stirring.
after about 2 minutes, add the beans, broth, salt and pepper.
stir, and bring mixture to a simmer.
simmer on low heat until the consistency is thick and spreadable (~10 minutes)
spread on toast, layering basil and tomato and s & p to taste.
