Pasta with white bean and tomato sauce

I made this after surveying the contents on our fridge/pantry one night when I wasn’t sure we had enough for a bona fide meal. It turned out to be absolutely delicious.

The ingredients and method are simple:

saute sweet onion and garlic in olive oil

add white beans and diced tomato, stirring, and simmer over very low heat to create a thick sauce

season bean/tomato/onion mixture with thyme, salt and pepper

add frozen peas and stir

meanwhile, bring a pot of salted water to boil for your pasta

while the water is heating up, chop  a head of broccoli into bite size florets

when the pasta is almost finished cooking, throw in the broccoli

remove the tender broccoli from the pasta water with a slotted spoon and add it to the sauce, with 1/4 cup or so of the pasta water

stir in the pasta and serve with fresh parsley (and/or Parmesan)
